Ingredients
  • 8 pcs of squid, fresh
  • 6–8 tbsp. of extra-virgin olive oil
  • Sea salt
  • 6 large cloves of garlic, finely chopped
  • 1 long red chill, diced
  • 1 handful of parsley, chopped
  • ½ lemon, juiced
Procedure
  1. Remove tentacles of squid. Pat-dry squid with a paper towel to prevent chewiness. Set aside and prepare the aromatics.
  2. Heat a tablespoon of olive oil in a large frying pan over high heat. Once hot, add the squid and cook for 2 minutes on each side. Remove from the pan. Sprinkle with sea salt.
  3. Add 2-3 more tablespoons of olive oil to the pan. Reduce the heat slightly.
  4. Add garlic, chili, and most of the parsley to the pan and sauté in olive oil for a minute until garlic is golden brown. Add squid and stir. Cook for 20-30 seconds. Drizzle with juice of ¼ slice of lemon.
  5. Serve topped with garlic and parsley.

Ingredients
  • 900 grams large squid
  • ⅔ cup milk
  • ⅔ cup flour
  • ⅔ cup cornstarch
  • Canola oil
  • Garlic powder to taste
  • Salt and pepper to taste
  • Lemons, cut into wedges
Procedure
  1. Wash the tentacles and the tubes with running water. Drain well and pat dry. Cut into rings.
  2. Place milk and squid in a bowl. Marinate in the refrigerator for at least 30 minutes. Drain and discard milk.
  3. Combine flour and cornstarch in a bowl. Stir. Coat squid  in mixture.
  4. Heat oil in a frying pan over medium heat to 175°C. Deep-fry coated squid in batches for about 1-3 minutes or until crisp and golden.
  5. Remove from pan and drain on a wire rack set over a baking sheet. Season with garlic powder, salt, and pepper to taste.
  6. Serve immediately with lemon wedges or spicy vinegar.

 

Adobong Pusit

Squid stewed in vinegar, soy sauce, and squid ink, better known as Adobong Pusit, is a popular dish in the Philippines. Just like regular adobo, it is also loaded with tons of garlic, giving it a scrumptious and robust flavor. This type of adobo typically contains more sauce than usual and is black in color due to the ink, giving it a salty flavor with a hint of seafood. The addition of vinegar and soy sauce mellows down and balances out the flavors.

  • 1 kg squid, small fresh
  • 6 pcs green chili
  • 1 tbsp olive oil
  • 1 onion, sliced
  • 8 cloves garlic, chopped
  • ¼ cup vinegar
  • ¼ cup soy sauce
  • 3 bay leaves
  • 1 tsp sugar
  • Salt and pepper to taste
Procedure
  1. Remove eyes, innards, and backbone of squid. Keep ink sac intact. Slice squid into pieces. Rinse thoroughly and drain well. Set aside.
  2. Heat oil in a pan over medium-high heat. Add onion and sauté for 2 minutes. Add garlic and sauté for 1 minute. Add vinegar, soy sauce, and bay leaves. Bring to a boil. 
  3. Add squid and sugar. Cook for 2-3 minutes or until squid changes color. Season with salt and pepper to taste.

  • 2 large navel orange, or 2 small
  • 2 tbsp fresh grated ginger
  • oil for the grill
  • 900 grams jumbo scallops (24 pcs)
  • salt and pepper to taste
  • double prong metal skewers
Procedure
  1. Peel orange. Slice into 4 1/2-inch thick wedges. Cut each wedge into 4 pieces.
  2. Squeeze 4 tablespoons of juice from the remaining orange.
  3. Combine honey, orange juice, and ginger in a small bowl.
  4. Heat oiled grill or grill pan over high heat.
  5. Poke the oranges and scallops onto the skewers alternately (start and end with the orange). Season with salt and pepper.
  6. Grill for 2 minutes on each side, until the scallops are opaque throughout. Brush and baste with sauce. Cook for 30 to 60 more seconds on each side.

  • ⅔ cup celery

  • 1 ⅓ garlic cloves, minced
  • ⅓ tsp. dried thyme (or 2 tsp. fresh thyme)
  • 1 ⅓ tbsp. all-purpose flour
  • ⅔ cup chicken stock or seafood stock
  • 300 grams potatoes, peeled and diced
  • 1 ⅓ (8 oz.) bottles clam juice
  • ⅔ cup half-and-half (half whole milk, half heavy cream)
  • 300 grams scallops
  • Fresh parsley, chopped
  • Salt and pepper to taste
  • ⅓ cup frozen sweet corn (optional)
Procedure
  1. Heat olive oil in a stewpot or dutch oven over medium heat. Add bacon. Cook until crispy for 5 minutes. Do not pour off fat.
  2. Add onions, celery, carrots, garlic, thyme, and a pinch of salt. Cook veggies until soft. Stir occasionally for 5 minutes.
  3. Stir in flour. Cook for about 1 minute. Stir frequently. Add stock. Bring to a quick simmer and allow mixture to slightly thicken.
  4. Add potatoes, clam juice, and half-and-half. Season with salt and pepper. Bring the mixture to a simmer. Reduce heat to medium-low. Cook partially covered for 15-20 minutes or until the potatoes are tender. Adjust taste as needed.
  5. Stir in scallops and corn. Cook until scallops are tender for 3-4 minutes. 
  6. Top with parsley and a sprinkle of red pepper flakes.

Once mixed, add most of the crabmeat. Toss for about 2 minutes, occasionally letting the rice sit without stirring so that it can toast and develop flavor. Be gentle when tossing so you do not break up the crab pieces too much.
  4. Once rice is dry and a little bit toasted, turn off the heat. Add most of the green onions and/or cilantro.
  5. Plate and top with the remainder of the crab meat and cilantro.
