This type of adobo typically contains more sauce than usual and is black in color due to the ink, giving it a salty flavor with a hint of seafood. The addition of vinegar and soy sauce mellows down and balances out the flavors.

Crab Fried Rice

Missing the flavors of Thailand? Whip up this Crab Fried Rice that is arguably known to be Thailand's most popular type of fried rice. This simple, uncomplicated, and delicious dish might just be your next favorite fried rice recipe!

crab fried rice
Yield 4 servings
Preparation Time 20 to 25 minutes
  • 6 tbsp. oil
  • 10-12 cloves garlic, chopped
  • 4 pcs eggs
  • 750 grams (5 cups) cooked rice
  • 2 tbsp. soy sauce
  • 4 tsp fish sauce
  • 2 tsp sugar
  • ½ tsp white pepper
  • 260 grams crab meat
  • Few sprigs of cilantro
  • Cucumber slices (for serving)
  • Lime wedges (for serving)
  1. Heat oil and garlic in a wok over medium heat. Stir until garlic turns golden.
  2. Add eggs. Scramble slightly. Let them set about halfway before stirring to break up the pieces.
  3. Over high heat, add rice, soy sauce, fish sauce, sugar, and pepper. Toss to distribute the sauce evenly. Once mixed, add most of the crabmeat. Toss for about 2 minutes, occasionally letting the rice sit without stirring so that it can toast and develop flavor. Be gentle when tossing so you do not break up the crab pieces too much.
  4. Once rice is dry and a little bit toasted, turn off the heat. Add most of the green onions and/or cilantro.
  5. Plate and top with the remainder of the crab meat and cilantro.
